Winter doesn’t Have to mean soups and stews, brighten up your dinner party with some summery desserts like this tart filled with berries and mascarpone. If you don’t have berries, switch these out for your favorite in season fruit.

Tart Shell

400g Sweet Short Pastry

Filling

150g Mascarpone,
 150g Cream Cheese,
 80ml Cream,
 100g Fresh or Frozen Berries,
 4 Tablespoons Icing Sugar
, ½ Teaspoon Vanilla Extract

Topping

150g Mascarpone,
 1 ½ Tablespoon Icing Sugar,
 1 Teaspoon Vanilla Extract, Fresh Berries

  1. Preheat the oven to 180°c bake, then lightly grease or oil the 12 cups of a muffin tin, then set aside.
  2. On a clean and floured surface, roll out your sweet short pastry until about 3-5mm thick. Using a large round or crinkled cookie cutter, cut out 12 circles of pastry, then gently manoeuver and press each circle into the cups of the prepared muffin tin. Scrunch up small squares of baking paper and gently place inside each cup, overlaying the dough, then fill each cup with baking beads or uncooked rice.
  3. Bake pastry for 15 minutes, then take out of the oven, carefully removing the baking beads. Return to the oven for another 5-10 minutes or until nicely golden. Once baked, remove from the oven and allow to cool in the muffin tin before moving to a cooling rack. Note: Depending on the thickness of dough and browning of tart shell, you may want to cover with tin foil part way through to stop shells from darkening too much.
  4. To make the filling, add the first measure of mascarpone and cream cheese to a bowl and beat with a hand-held beater until incorporated and smooth. Next, add in the vanilla, icing sugar and 100g of berries, beating and mashing until the berries have broken down slightly.
  5. In a small bowl or jug, beat the cream until soft peaks form. Gently fold this through the berry mixture.
  6. To make the topping, beat together the second measure of mascarpone, icing sugar and vanilla in a small bowl until smooth. Tip: To add the perfect blob to the top of your tart, fill a piping bag (with desired piping tip) with the vanilla mascarpone and pipe small blobs or swirls onto a sheet of baking paper. Place this in the freezer to chill and harden for about 30 minutes, then using a knife, gently scrape vanilla mascarpone off baking paper and place on top of your filled tarts.
  7. To assemble the tarts, spoon desired amounts of berry mixture into each cup, followed by the vanilla mascarpone swirl on top. Finish off by decorating with fresh berries, and serve.
